Sir Collins

The Collins is a popular cocktail from the 19th century, and a great example on how soda water changed the cocktail world, evolving drinks from the Sour.

Most commonly made with gin, the Collins might be the cocktail made with the most variations compared to any other. Here it's made with Mandarin and Bergamot soda, unleashing the citrus notes of the Mediterranean!

Ingredients

• 40ml London Dry Gin

• 10ml Yellow Chartreuse

• 100ml Three Cents Mandarin & Bergamot Soda

How to:

Add Dry Gin and Yellow Chartreuse in a tall glas over cubed ice and gently top with Three Cents Mandarin & Bergamot Soda. Garnish with coriander spring.

Variation:

If you want to make a Mexican twist on the drink, muddle the coriander in the glass, and add tequila instead of gin!
